The following info comes from a 4Gamer interview with Super Mario Odyssey producer Yoshiaki Koizumi, as translated by NintendoEverything...
- the initial concept was to make “a new Mario that continues to stick in people’s minds”
- previous Mario games had "sympathy" as their theme, but Odyssey has "journey" as its theme
- New Donk City was created when the team was told they had to make things “that fit into Mario,” but then told the opposite
- Tostarena is based on Mexico
- director Kenta Motokura really likes Mexico, and his trips to the country left a strong impression on him, resulting in Tostarena
- Jump Up, Super Star! was composed by Naoto Kubo, with lyrics written in Japanese by Nobuyoshi Suzuki.
- at first the team wanted to make Pauline the princess of New Donk City, but a princess doesn't fit the city's setting
- this was the biggest dev team to work on a 3D Mario, and had an age range from young to old
- the team likes that the capture mechanic allows players to create shortcuts in gameplay on their own
- the Zelda and Mario teams didn't really mingle during development of their respective games
- with that said, both teams had a core goal of making “interesting things that could be done in 3D worlds”
- Koizumi says Mario will still continue to innovate while protecting the series’ staple points
- Koizumi thinks rating boards may have risen the age classification because there are tanks in the game that are more realistic
- the dev team would never change the fact that “Mario is a person related to interesting things”
- he says it would be the best for the team if people think “Mario is the one who keeps doing new things all the time”
