Each coaster depicts a different layer of the iconic starship, and when you put them all together, the whole Enterprise forms before your eyes in 3D; remove the very top coaster, and you can peer through the primary hull, down into the saucer and nacelles.
Further, revealing the NCC-1701 in cutaway, each coaster lists which of the Enterprise's features are detailed on it.
